Bovine gelatin is a gelatin powder made from collagen-rich bovine raw material. Unlike collagen hydrolysate, gelatin gels, making it suitable wherever a firm, creamy, or stable consistency is desired.

What is bovine gelatin used for?

Homemade gummy candies, panna cotta, cake fillings, creamy desserts, sauces, and soups. When making them yourself, you retain full control over the ingredients – without the colorings, flavorings, or sweeteners common in ready-made products.

Application and dosage

As a rule of thumb, use 6 to 8 grams of powder per 500 ml of liquid for a firm consistency; the exact amount depends on the recipe. First, stir the powder into a small amount of cold water and let it swell for about five minutes, then dissolve it over low heat while stirring – do not boil. Stir directly into warm dishes; for cold dishes, first mix a small amount of the mixture with the dissolved gelatin and then fold it in.

Gelatin, collagen hydrolysate, or tripeptides?

All three come from the same raw material and differ in the degree of breakdown. Gelatin is the least broken down, gels, and only dissolves when warm. Collagen hydrolysate is enzymatically broken down into smaller peptides, does not gel, and also dissolves in cold liquids. Tripeptides consist of chains of only three amino acids and are the most heavily broken down.

Composition

Pure bovine food-grade gelatin, flavor-neutral, with 86 g of protein per 100 g. Free from additives, flavorings, sweeteners, preservatives, or binders.

Origin and processing

The raw material for our grass-fed beef gelatin comes from grass-fed cattle in Turkey. Processing takes place in Switzerland, and it is packaged in Germany.

Is bovine gelatin halal?

Not necessarily. Commercially available food-grade gelatin is often obtained from pork skin. Gelatin is only halal if the cattle have been slaughtered accordingly and the entire processing chain has been certified. Our bovine gelatin is halal-certified by m-haditec GmbH, Bremen (Reg. No. 150527haevoey).

Quality control

Every batch is tested for microbiology and heavy metals in an accredited German laboratory. The analyses are publicly viewable and can be traced via the batch number on the packaging.
